Chef’s Tips
- Try adding the sugar at the end. You may need more or less depending on the level of sweetness you prefer and the type of chocolate you use.
- Don’t want to risk burning the chocolate in the microwave? You can also melt the chocolate in a bain-marie (a hot water bath). Over a small pot with a little water which has been brought to the boil, place a glass bowl or stainless steel one (with rounded edges) into which your chocolate has been placed. The heat from the boiling water will melt the chocolate. Don’t overfill the pot with water – water droplets formed via condensation from the steam could splash into your chocolate and ruin it.
