You’ve made it and landed at Ben Gurion International Airport. You’ve made your way through ‘Immigration’ and you begin to wonder about your first hummus experience in Israel. Before ordering hummus, there are a couple of important concepts to learn.
The key ingredients of hummus are chickpeas, tahini, lemon juice and garlic. Hummus is often served with a side-dish of pickled vegetables (Heb: hammutzim); olives, cucumbers, carrots, cauliflower, baby eggplant and green spicy peppers as well as some raw onion.
Israelis do not eat hummus – they wipe hummus. A group of hungry friends will say “Let’s go and wipe some hummus” – Bo LeNagev Ketzat Hummus.

To eat hummus like an expert, you need to break off a piece of pita and ‘wipe’ the pita through the spread and then put it into your mouth. Eating hummus with a knife or fork immediately identifies you as a tourist or new in Israel with no previous hummus eating experience whatsoever.
